Mary Lou's Hash Brown Potato Pie

Perfect for a Sunday breakfast, this pie is thrown together very quick. Add cooked ham or sausage to mixture if you desire.

Ingredients

  • large egg (or 1 3/4 cups egg substitute)
  • 1/2 cup milk
  • cups country-style hash brown, thawed
  • 1/3 cup green onion, thinly sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon hot pepper sauce
  • 1 1/2 cups sharp cheddar cheese, shredded and divided
  • slices bacon, cooked crisp and crumbled (or 1/3 cup real bacon bits)
  • Directions

      Heat oven to 350°F.
    2. 2
      Beat together eggs, milk in a medium bowl.
    3. 3
      Stir in potatoes, green onions, salt and pepper sauce.
    4. 4
      Stir in 1 cup of the cheese and 1/2 of the bacon.
    5. 5
      Pour into a greased 9 inch pie plate.
    6. 6
      Bake for 25 or 30 minutes or until the center is set.
    7. 7
      Sprinkle the remaining bacon and 1/2 cup cheese over the top and continue baking 3 to 4 minutes or until cheese melts.

    This was a delicious breakfast casserole. The only change I made was to serve the bacon on the side. Came together quickly and was easy to prepare. Thanks for sharing the recipe!

    Wow! This was absolutely amazing! I made my own hash browns for it and used 2 cups of cheddar as we love cheese. I used 1/2 of the onion called due to family preference. Thanks, Mary! Made for Aus/NZ Recipe Swap 14
