Zucchini and Carrots With Green Onion and Dill

Ingredients

  • 1 1/2-1 3/4 lbs zucchini, trimmed, coarsely grated
  • tablespoons olive oil
  • 1 1/2 cups green onion, chopped, about 6 large, divided
  • 1 1/2 lbs carrot, peeled, coarsely grated, about 5 large
  • tablespoons fresh dill, chopped, divided
  • salt
  • pepper
  • Directions

    1. 1
      Roll up grated zucchini in large kitchen towel; press to dry.
    2. 2
      Heat oil in large deep skillet over high heat.
    3. 3
      Add 1 cup green onions and sauté 30 seconds.
    4. 4
      Add zucchini, carrots, and 2 tablespoons dill.
    5. 5
      Sauté until vegetables are just tender, tossing often, about 8 minutes.

      Mix in remaining 1/2 cup green onions and 2 tablespoons dill.

      Season to taste with salt and pepper.

    It may have been an error on my part, but this came out like multicolored mush with a weird flavor.
