Spatchcocks With a Herb Butter and Sage and Bacon Sauce

Recipe #271632 | 1½ hours | 30 min prep | add private note

Spatchcocks are just baby chickens usually weighing between 450-600g a bird, they have great flavour, although a little fiddly when eating. I love this recipe I think it so full of flavour.

SERVES 4 (change servings and units)

Ingredients

Sage and Bacon Sauce

Directions

  1. 1
Combine butter, garlic and herbs in a bowl.
  2. 2
Loosen the skin of the spatchcock by sliding fingers between skin and meat at neck joint, divide butter evenly between spatchcocks, and spread as evenly as possible under the skin. (don't worry if it is a little lumpy, it melts once in the oven which helps it to disperse. I know this step can be a little tricky since I have made this several times, but it is worth it.).
  3. 3
Place 2 thyme sprigs inside the cavity and tie legs together with kitchen string. Wrap a slice of prosciutto around each spatchcock and place in a baking dish.
  4. 4
Drizzle combined oil and juice over spatchcocks and roast in a preheated oven 180c for 45-50 Min's or until cooked through.
  5. 5
Serve spatchcocks with bacon and sage sauce.
  6. 6
    For the Sauce.
  7. 7
Heat oil in pan, add onion, garlic and bacon. Cook, stirring until onion is soft and bacon lightly browned.
  8. 8
Add water, stock, wine and mustard.
  9. 9
Bring to boil, simmer, uncovered for 5 minutes or until reduced to 1 cup.
  10. 10
    Stir in cream and sage.
  11. 11
    Serve sauce over spatchcocks.
  12. 12
I served mine with stuffing balls and asparagus.
  13. 13
For photo purposes I didn't pour sauce over.

Absolutely wonderful chicken. Made as posted assuring I had the fresh herbs on hand before making. I think the neighbours must have known just how good our supper was - the aroma had us anticipating. Made as posted and wouldn't change a thing. I am coming up with a great collect of recipes for those summer guests!

Words cannot describe what a taste of heaven this recipe is. We used cornish game hens because I didn't think we'd be able to find baby chickens, but the size was about right. The hens were moist and delicious and the thyme was a wonderful addition. I also put a few slices of onion into each of the cavities. I didn't have red onion, but used a sweet onion instead and went with a splash of heavy cream instead of the 1/3 cup cream. We loved this and I've had a request for this again. High praise, indeed, Flying Chef! Thank you!
