These are great for CHRISTmas, Valentines, or anytime! This is one I've made for years which came from a Hershey's book.

SERVES 24 , 24 cookies (change servings and units)

    Beat butter, sugar, egg yolk, and vanilla in medium bowl until light and fluffy. In another bowl, stir flour, cocoa and salt. Add to butter mixture gradually until blended. Refrigerate dough until firm (about 1 hour).

    Heat oven to 350. Lightly grease cookie sheet. Shape dough into 1 inch balls. Beat egg white slightly with fork. Dip each ball into egg white then roll in nuts (I've also done without the egg/nut mixture due to family preference). Place on cookie sheet. Press thumb gently in center of each cookie.

    Bake 10-12 minutes or until set. While cooking, prepare filling by combining powdered sugar, 1 T. butter, 2 t. milk, and 1/4 t. vanilla until smooth. Remove wrappers from candies. Remove cookies from cookie sheet to wire rack; cool 5 minutes. Spoon about 1/4 t. filling into each thumbprint. Gently press an unwrapped candy in center of each cookie. Cool completely.

I am not going to assign stars as I think I made a mistake in preparing these cookies. Chalking it up to the heat. My dough was very soft and tender even after chilling for 2 hours. Rolled in the egg white and chopped walnuts as presented and ended with a decidedly different cookie, entirely flat and wafer-like with a nutty ring on the outside. Certainly no place to leave my thumbprint behind. My guess is that I mis measured the flour and plan to adjust with my remaining cookie dough. All that said, the cookies were delicious; rich in deep chocolate they were more like a brownie in cookie form. Certainly a taste I think will carry in the proper preparation. Update: I added additional flour and prepared the remaining dough, but think I added a wee too much. Sigh! The cookies were delicious and had a light cherry note with the chocolate. They were snapped up quickly and enjoyed by my co-workers immensely. If two consecutive mistakes can result in great cookies, you know the proper recipe has to be great.

    I love this chocolate version of thumbprints. They worked out perfectly for me and look great on my cookie trays. My guests have loved them and ask for the recipe. Thanks for sharing!

    I split the dough and rolled only half in peanuts (rather than walnuts) and they look so pretty. The other half, I did not roll in anything and they spread out alot so they weren't as pretty. Put a mint kiss in those and tinted the icing/filling green. Next time, I would add a bit more flour if not rolling in nuts just to make them spread out less. Both versions taste very good though. Thanks for posting.
