Easy African-Style Peanut Chicken

I love a wide variety of cuisines, and I have a fondness for African foods. I am a single mother with a multiple handicapped brain damaged child. I also go to college full time and work in Oncology, so I am always needing something good but fast! I have a friend in Africa who sends me recipes and I kind of tweak them for ease, shall we say. I make this with my African style rice (look for it in my recipes!) Enjoy!

SERVES 2 (change servings and units)

Ingredients

Directions

    Diced chicken breasts in to bite sized pieces.
  2. 2
    Saute in 1 tbs peanut oil until just before cooked and remove from heat and set aside.
  3. 3
    In a separate pan saute diced tomatoes and onion in butter and peanut oil until soft.
  4. 4
    Add peanut butter and stir well.
  5. 5
    Then add the water and mix well.
  6. 6
    Now add chicken to mixture and bring to boil.
  7. 7
    At boiling point, reduce heat to medium and cook for about 6 minutes
  8. 8
    Serve warm over African Style Rice!

Easy and excellent. I used real garlic and canned tomatoes. Turned out delicious.

    We loved it! My boyfriend generally doesn't like peanut sauces, but he liked this one. He went for seconds on the chicken and rice. I tend to like peanut sauces to be spicier, and next time I'll add some crushed red peppers to the tomato. Thanks so much!

    Thanks, Emmas Mom, for very yummy recipe. I served this with your African style rice. I've never done a main dish with peanut butter before. Not adventerous enough, I guess. lol. I had all the ingredients on hand and I've been wanting something different with rice. This was so quick and easy, healthy and low sodium as well. Thank you so much for posting this. we will be enjoying this again soon!
