These rich little apricots balls are more-ish. I challenge you to eat just one. They're very nice in summer when frozen as well. (The serving size is a guess as I haven't made this in several years and it also depends on how big you make the balls. I'll ammend this next time I make them)

Ingredients

  • 750 g dried apricot
  • cups desiccated coconut
  • 1 1/2 cups brown sugar
  • 590 g sweetened condensed milk (or 1 1/2 tins)
  • teaspoons lemon juice
  • Directions

    1. 1
      Mince apricots in blender.
    2. 2
      Combine with 1 1/2 cups of coconut and all other ingredients (reserving 1/2 cup coconut for rolling) and blend well.
    3. 3
      Take a teaspoonful of mixture and roll into balls.
    4. 4
      Toss in extra coconut.
    5. 5
      Store in fridge.

    Very nice indeed busyozmum. I halved the amounts given and still made plenty. got about 20-25, not sure because as I mad them the kids were tasting them !! A very tangy flavour from the apricots and yet sweet, and you are right they are very more-ish. They vanished before my eyes, even by those who dont like apricots!!!!Actually I wished I had made the whole amount !! Will be making agin....Thanks busyozmum.
