Easy, tasty, and pretty!

20 biscuits (change servings and units)

Ingredients

Directions

  1. 1
Combine Bisquick and orange peel. Cut in cream cheese until mixture resembles coarse meal.
  2. 2
Add sweet potatoes and milk, stirring just until dry ingredients are moistened.
  3. 3
Turn dough out onto a surface dusted with baking mix. Shape into a ball and knead 4 or 5 times. Roll 1/2 inch thick.
  4. 4
Cut with 2 inch biscuit cutter dipped in baking mix. Place about 2 inches apart on an ungreased cookie sheet.
  5. 5
Using a sharp knife dipped in baking mix, make 6 1/2-inch cuts around the edge of each biscuit to form the daisy's petals. Use your thumb to make an indentation in the center of each biscuit. Put about 1/4 teaspoon of marmalade in the indentation.
  6. 6
Bake at 450 degrees for 8-10 minutes or until golden brown.

These were really good! I'm the first to admit I'm biscuit challenged, but these were easy. I used Bisquick for the baking mix, and mango jam instead of orange marmalade. I also blended the sweet potato with the milk before adding to the dry ingredients to make mixing easier. These were served with sliced, sweetened strawberries and whipped cream, almost like a shortcake. Yum!

These were really good. My mashed sweet potatoes had been buttered, but that was no problem. A nice change from plain biscuits.
