This is a recipe you can do in muffins about 20 to 25 minutes or in a loaf pan. From Jean Paré. The icing gives this loaf a particular taste. And the icing is really sugar, not powdered sugar. The icing goes down the loaf.

SERVES 12 , 1 loaf (change servings and units)

    Beat butter in a big bowl with sugar and 1 egg. Add the second egg and beat. Add the milk.

    In another bowl, mix flour, baking powder, salt and lemon peel. Pour on the dough. Mix only to wet.

    With a spoon, pour in a greased loaf pan of 9 x 5 x 3 inch.

    Cook in the oven at 350 F for 1 hour until the loaf is cooked. Remove from oven and put icing.

    Icing: Put lemon juice and sugar in a small saucepan. Heat and stir to dissolve sugar. Put with a spoon on the warm loaf.

    Let cool in the pan for 10 minutes. Remove from the pan. Let cool and wrap.

    This recipe is great! I made 12 cupcakes and it was quick and easy. I used self-rising flour in place of the flour, salt and baking powder. There is something to be said about this topping also. I tripled it, and stored the leftovers in a jelly jar in the refrigerator. Now I'm stirring it into my hot tea in the morning. Sensational!! Thanks for posting a definate keeper!

    Thanks Boomette! I love Jean Pares Recipes, and I made this loaf today. Yum! Love the flavour and only added some sweet cranberries.

    I am having trouble describing how delicious this is. It is all I can do to keep myself from running into the kitchen and eating the WHOLE loaf! I did change a few things based on what I had on hand (not much ;P), i.e. applesauce for butter, whole-wheat instead of all-purpose, and soda instead of powder. I also decreased the sugar to 1/2 cup and it came out GREAT. The only odd thing was the icing--should it be powdered sugar, perchance? Mine came out watery so I just poked holes in the cake and poured it on top. Heaven. Heaven heaven heaven. Thank you soooo much for posting!
