Oat Bran Health Bread

A tasty bread machine health bread enriched by the fiber and nutrition of oat bran and flax meal. Submitted by R. Holland to the AllRecipes.com site. I haven't tried this recipe yet, but it was given good reviews. Posted recipe so I could find it on my favorite website - Recipezaar!

SERVES 10 -12 , 1 loaf (change servings and units)

    Add water, yeast, canola oil and honey to the pan of the bread machine; stir to dissolve yeast. Let stand until creamy, about 10 minutes.

    In a large bowl, stir together oat bran, whole wheat flour, bread flour, flax seed meal, wheat gluten and salt. Pour this mixture into the pan of the bread machine. Select Whole Wheat cycle; press Start.

    After the dough has risen, remove it from the bread machine and turn it out onto a lightly floured surface. Form into a loaf shape and place in a lightly greased 9x5 inch loaf pan. Let rise until doubled, about 45 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).

    Bake at 375 degrees F (190 degrees C) for about 30 minutes or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

The best part about having a bread machine is the ability to throw some ingredients together, let the bread machine do its work, and then have a great loaf of bread. This recipe had too many in-between steps for me, so I threw it into my Cuisineart 2lb capacity bread maker, set it to white cycle, and let it go. It did, in fact, turn out a hearty loaf of bread without all the pre-mixing. If you are lazy and want to do it my way, I suggest adding 1/2 to 3/4 c more liquid than the mere 1 1/2 c and maybe some more sweetner. I didn't add the gluten, and the middle kind of sunk in, so that may be why. All and all good recipe, thanks for sharing!

    This turned out to be a beautiful loaf of bread. I liked the nutty taste of the oat bran and flaxseed meal. I made this by hand because my bread maker has been acting funny lately and didn't want to take a chance. Next time I might add a little more salt and try subbing molasses for the honey--just for a different taste.
