Posting to go with my recipe for Carrot and Kaffir Lime Salad and Chicken Patties With Hot and Sour Sauce.

1 cup (change servings and units)

Ingredients

Directions

    Pound chillies and garlic together until a paste is formed.
  2. 2
    Transfer to a bowl, add fish sauce, lime juice and sugar to taste and stir well to mix.
  3. 3
    Adjust flavours to that sauce is equally salty and sour with a touch of sweetness.
  4. 4
    Rest the sauce for 15 minutes before using to allow the flavours to merge.
