Chicken Roll-Ups

Tender and freeze well. You can bake half of them and freeze the rest.

SERVES 8 (change servings and units)

Ingredients

Directions

    Flatten chicken to 1/4-inch thickness.
  2. 2
    Place a slice of ham and cheese on each piece of chicken.
  3. 3
    Roll up from a short side and tuck in ends; secure with a toothpick.
  4. 4
    In a shallow bowl, mix crumbs, grated cheese and parsley.
  5. 5
    Pour milk into another bowl.
  6. 6
    Dip chicken rolls in milk, then roll in crumb mixture.
  7. 7
    Wrap and freeze roll-ups for up to 2 months.

    To use frozen chicken--completely thaw in the refrigerator.

    Unwrap roll-ups and place on a greased baking sheet.

    Spritz with nonstick cooking spray.

    Bake uncovered, at 425 degrees for 30 minutes or until juices run clear.

This was excellent and incredibly easy to make. I used dried parsley instead of fresh and took them out a little early (after about 22 minutes), as the chicken was beginning to dry out. I'm sure the timing varies based on the thickness and size of the breasts.

    This recipe was really simple and delicious. We eat alot of chicken, and i'm always looking for new ways to make it. I didn't have any provolone cheese, so I used cheddar. It turned out great though! Thanks for the great recipe!

    We really enjoyed these rollups. I froze several of them for my teenage daughter to heat up after cheerleading practice and they cooked up nicely even after being frozen. I will definately make these again but will use extra provolone cheese.

    Made as directed and found this very tasty! I did cut the breasts in half after flattening and still found that one roll-up was plenty for me. They make a nice presentation when served!
