Blueberry Muffins

These used to be served at the Jordon Marsh department stores(now Macy's). On our shopping trips, my sister and I always made sure we stopped at their restaurant and had one of these blueberry muffins with a cup of coffee...they are delicious!

SERVES 12 (change servings and units)

Ingredients

    Grease 12 cup muffin pan.
  2. 2
    Preheat oven to 375.
  3. 3
    In large bowl with mixer at medium speed, cream butter and sugar until light and fluffy.
  4. 4
    Add eggs one at a time, beating well after each addition.
  5. 5
    Combine flour, baking powder and salt.
  6. 6
    Add alternately to creamed mixture with milk and vanilla.
  7. 7
    Crush 1/2 cup berries and add to batter.
  8. 8
    Fold remaining berries into batter and spoon into muffin pan.
  9. 9
    Sprinkle with sugar.
  10. 10
    Bake 30 minutes or until toothpick inserted in center comes out clean.

    Cool in pan 5 minutes and turn onto wire rack.

    AWSOME! These really really were so gooood! I have never made home made muffins, and these turned out perfect! I only had to bake for about 17 minutes though! So watch that. I think my oven tends to cook fast though.. Lovely recipe! Absolutely perfect

    These muffins were GREAT!! My whole family enjoyed them. My husband asks everyday when am I making them again? I wouldn't change a thing about them. I did undercook mine a bit. Maybe it's just my oven, they seemed to be done before time was up. I suggest anyone who wants to make blueberry muffins try them at least once. You'll be glad you did.

    Very very good and moist. I didn't have any milk in the house so I substituted 6oz of Strawberry Yogert. Excellent choice, mixed the berry flavours, and added even more moisture. For the topping I used Sugar in the Raw to try and duplicate that "in store" taste.
