Dried Cranberry Chutney Appetizers

Made in minutes with just four ingredients, this chutney makes a great side dish. You can also use it to perk up grilled chicken, roasted vegetables, or tortilla wraps.

Ingredients

  • 1/2 cup dried cranberries
  • 1/4 cup water
  • tablespoons sugar
  • tablespoon finely chopped fresh ginger
  • 3/4 cup mango chutney
  • soft cheese or cream cheese
  • apple, slices
  • toasted baguette, sliced or cracker
  • Directions

      Combine dried cranberries, water, sugar, and ginger in a small saucepan.

      Bring to boiling.
    3. 3
      Cover and remove from heat.

      Let stand for 15 minutes.

      Snip any large pieces of mango chutney.
    6. 6
      Stir chutney into cranberry mixture.

      Cover and chill at least 2 hours (overnight recommended).

      Serve cranberry chutney with soft cheese or cream cheese, apple slices, and crackers, or with toasted baguette slices.

      Makes about 1-1/3 cups chutney (twenty-one 1-tablespoon servings).

      Make-Ahead Tip: Refrigerate chutney, covered, up to 2 days.

    I love these little babies ~~ mainly for their great taste, but they are also easy to fix + make ahead friendly & were perfect as a finger-food apply prior to the soup course of our Christmas Eve dinner. I made the chutney/cranberry mix + toasted baguette slices lightly brushed w/olive oil the day b4, so it was an easy matter to spread the cream cheese + chutney mix & present them to DH & my MIL. They were very well-received & I see them working equally well as part of a traditional cheese & fruit platter for dessert so popular here. They are great for the holiday season, but will have their place yr-round for me to provide eye appeal & variety to the dessert genre. Thx for posting this nifty recipe for us. ~ 12/27 ~ Edited to Add the 5* the recipe deserved, but I somehow neglected to include in my review.

    I made the chutney up the day before as advised, and served it on top of rice crackers with local soft goat's cheese for an amazing appetiser with a FLAVOUR EXPLOSION!!!!!! Easy, as you can make the chutney the day before....and very versatile! I used my own mango chutney, and LOVED the chutney mixture! I am so sorry Annacia, I took the photos and FORGOT my lovely apple slices!! A great recipe with all my favourite ingredients! Thanks! FT
