Financial Jam

when I was in the states I went to Wegmans. It is the best most wonderful supermarket you could ever find. They sold brie and camebert cheese with toppings. I came home and couldn't find anything like it, so here is my recipe for a "topping" I usually add this tag FINANCIAL JAM Caused by Politicians, banks, bosses, G.S.T., family, mates, poker machines & credit cards. Tell your friends you have a Financial Jam, And they should bring Camembert!!! It isn't really a recipe, its more of an idea, and I invite you to do your own thing. I have used craisens, in the mix, was great, but I found australian sultanas were way too sweet. You dont have to add the chilli, but it cuts the sweetness. I use Chrissyo's chilli sauce for home use, its great, but the jam doesnt look as good.

SERVES 6 , 6 8 oz jars (change servings and units)

Ingredients

Directions

  1. 1
Pour the apple juice in a big pot and boil till reduced by half.
  2. 2
    Add sugar, stir till dissolved.
  3. 3
Simmer away until the toffee mixture reaches soft ball stage.
  4. 4
    Turn off heat.
  5. 5
    Sterilize jars.
  6. 6
Fill the hot dry jars with nuts etc.
  7. 7
Chop the chillies, and add to toffee mix.
  8. 8
    Stir to combine.

Pour into jars to cover, put any extra into a spare jar.
  10. 10
NOTE: when ready to serve, if the mix is too thick, take off the lid and micro wave for 30 seconds.
  11. 11
Drain some of the toffee if you haven't got a sweet tooth, and add nuts to the jar for next time.
  12. 12
For a gift, add a tag.
  13. 13
    FINANCIAL JAM.
  14. 14

Wow! Yum! Absolutely amazing served over camembert. I'll be making this one for Christmas presents for sure. I think we are really lucky that Jan actually shared this with us! Thank you Mummamills. Now I'd really love your recipe for Pickled Peppers - pleeease!

I was lucky enough to be given a jar of this amazing stuff by mummamills herself. I begged the recipe from her and here it is. My husband was a bit sceptical about camembert with this sweetish, spicy topping, but is now a firm convert. Mumma sent me on my way with a jar and I shared my precious stuff with Jewelies who also loved it. I'm currently staying with her and we plan to make our own batch tomorrow before I leave. I topped up the remaining toffee with roasted macadamias for a change.

I was lucky enough to taste this yummy Financial Jam from the creator mummamills at Jewelies home (See menu: A BBQ with Chef floWer and Mummamills) It was so yummy, mummamills served it with Camembert cheese and crackers. I liked the sweet, spicy and crunchy texture from the jam on top of the savoury contracts with the cheese. Thank you mummamills.
