G'shtuptaful Lew'r - Stuffed Liver

Ingredients

• 1 calf liver
• salt and pepper
• 1/4 cup flour
• 3 slices salt pork or bacon

Sage Stuffing

• 3 cups soft breadcrumbs
• 1/2 teaspoon salt
• 1/8 teaspoon pepper
• 1 tablespoon sage leaf, crushed
• 1 tablespoon onion, minced (more if desired)
• 1/3 cup butter

Directions

   For the dressing: combine the first five ingredients; add butter and toss lightly with a fork.

   Wash liver in cold salted water and dry well.

   Make an incision in the thickest part using a sharp knife.

   Fill with stuffing.

   Season with salt and pepper; dredge with flour.

   Place in roasting pan and place strips of pork on top.

   Add a little water and bake at 350F for 1 hour.
