Zucchini or Yellow Squash Casserole

This is different from your usual squash recipe.A friend of mine brought it to a pot luck dinner 15 years ago and it has been a family favorite since then.

SERVES 6 (change servings and units)

Ingredients

Directions

    Saute onions&bell pepper in margarine for 5 minutes,add squash that has been sliced and cubed.
  2. 2
    Saute 5 min more,add tomatoes, (break up whole tomatoes) cook 5 more minutes.
  3. 3
    Add bread cubes and seasonings.
  4. 4
    Put in 2 quart casserole,sprinkle top with parmesan cheese.
  5. 5
    Bake at 350 for 30 to 40 minutes.

Such a versatile recipe where you can easily make changes based on what you have at home for a complete meal! I sauteed minced garlic in the butter, and used 1 zucchini and 2 small yellow squash. I omitted the bread and added 2-3 cups of cooked pasta, shredded chicken, fresh parsley, and mozarella cheese to the mixture. I used two cans of diced tomatoes (1 fire roasted tomatoes + 1 diced with jalapeno peppers (nice, small kick!)). Very tasty, but the amount of butter is the only thing that makes me cringe so I used a bit less than 1/4 cup. Everyone loved it!

    My family loved it, even my 2 year old! I especially liked the flavor of the parmesan on top.

    This recipe is excellent!! We altered it by using (2) 14 oz cans of diced tomatoes with garlic and onions. We found by using two cans instead of one it turned out more moist. We definitely recommend this recipe. It has become one of our favorites!!!!

    This recipe was very delicious the only thing i changed was that i used rotel diced tomatoes with garlic and oregano instead of the plain tomatoes, this will surley be a recipe i will make again.
