Healthy Carrot Cake

This recipe is based on the wonderful recipe listed here as Vegan Carrot Cake #8925. I tried to make it a bit healthier, and have found using organic carrots makes a big difference in flavor!

SERVES 12 (change servings and units)

    Preheat oven to 350 degrees F.

    Grease a 9x9 inch cake pan.
  3. 3
    Stir together all dry ingredients except nuts.
  4. 4
    Mix in carrots, tofu, oil, apple sauce and vanilla.
  5. 5
    Beat about 2-3 minutes until well mixed.
  6. 6
    Stir in the walnuts.
  7. 7
    Pour mixture into greased cake pan.
  8. 8
    Bake at 350 degrees for about 55 minutes, or until a knife inserted into center comes out cleanly.

    Cool on a wire rack.
