Eggnog Cinnamon Swirl Bread

This is a wonderful Christmas quick bread. Don't let the list of instructions scare you off. It's really quite easy and the result is delicious. Wrapped up pretty this bread is a lovely gift.

Ingredients

  • Cinnamon Swirl

      Preheat the oven to 350 degrees F.

      In a small bowl, combine the cinnamon swirl ingredients and mix well.
    3. 3
      Set aside.
    4. 4
      In a large bowl, combine the flour, sugar, baking powder, baking soda, cinnamon and salt.
    5. 5
      In a medium bowl, combine the egg nog, oil, eggs and vanilla.
    6. 6
      Beat with a fork to combine and stir the wet mixture into the dry ingredients, stirring until just smooth, don't overdo it.

      Pour half the batter into a greased loaf pan.

      Spoon half the cinnamon swirl mixture over the batter, and cut through with a knife to swirl.

      Top with the remaining batter.

      Spoon on the remaining swirl mixture, and swirl with a knife.

      Bake for 60-65 minutes or until whatever you stick in the middle comes out clean.

      Cool for 10 minutes in the pan before removing to a wire rack.

    You are so right this is a wonderful christmas quick bread! Love the toffee, cinnamon combination. I ground the pecans very fine. I used store bought (light)eggnog worked great. It has a great eggnog flavor. I found it overflowed a bit in my pan. I put a baking sheet under the pan when baking. Baked up nicely in 60 minutes, a very nice moist loaf. Thanks Annacia for sharing this recipe.
