This is not an authentic restaurant-caliber nacho recipe by any means - I got it off a can of bean dip when I was in high school before the whole nacho craze really took off. To this day, I will still make a plate or 2 of them for us whilst watching tv, as we usually have most of the ingredients laying around. They are really flavorful and delicious.

SERVES 4 -6 (change servings and units)

    Smear about 1 tbs bean dip on one side of each tortilla chip, and place on a microwave safe plate. Do not stack.

    Spoon some salsa on the top of the beans.
  3. 3
    Place 1 pepper slice over the salsa and top with piece of cheese.
  4. 4
    Microwave on high for 1 or 2 minutes, until the cheese is just melted.

    It's such a stupid 'recipe', I know, but they are really good and very addicting!

We loved these nachos! I took suggestions from other reviewers and they turned out great! I preheated the beans, used shredded cheddar cheese (mixed with some pepper jack) and Tostitos Scoops. Thanks for sharing this quick, easy and tasty recipe, Steve! **Made for Spring PAC 2008**

    These are really yummy and easy to prepare. I used low fat refried beans with jalepeno peppers. I cheated and heated the beans and sloppily spread them over the corn tortilla chips. I then cheated again and spread shredded mexi 3 or 4 cheese over the plate and finished off with hot taco sauce and nuked in the microwave.

    We make these all the time. They were served as appetizers at a little Mexican place we use to go to. We do it a little differently. First we spread the refried beans on each tortilla chip. Spoon some salsa on top of the beans. Cover with shredded cheese and heat up in the Microwave. Yummy.
