Sea Bean Chowder

Tomato based chowder, acceptable for fasting

Ingredients

  • cups dried beans or canned bean
  • cups onion, chopped
  • 6 garlic clove, minced
  • 1 (32 ounce) container Clamato juice
  • cup white wine or sherry wine
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • tablespoons parsley, chopped or 2teaspoon dried parsley
  • 1/4 cup fennel, chopped or 1/2 teaspoon crushed fennel seed
  • salt & pepper
  • 1 (16 ounce) jar salsa, chunky style
  • 1 (10 ounce) jar baby clams, whole
  • lb shrimp, briefly cooked and shelled
  • Directions

      Cook dried beans.

      Saute onion in oil.
    3. 3
      Add Clamato juice, wine and all seasonings.

      Simmer Simmer for a long time.
    5. 5
      Add beans.
    6. 6
      15 minutes before serving add shrim and undrained clams.
