Lemon flavored mead--Finnish from Time Life Books.

SERVES 5 , 5 qts (change servings and units)

Ingredients

    Peel lemons with (just zest) with veg. peeler.
  2. 2
    Eemove pith (white part).
  3. 3
    Alice lemons very thin.
  4. 4
    In 6-8 qt bowl place lemon peel lemon slices and sugar (minus 5 tsps).

    Pour water over and stir let cool to tepid.
  6. 6
    Stir in yeast.
  7. 7
    Let stand 12 hrs uncovered.
  8. 8
    Add 3 raisins and 1 tsp sugar to each bottle.
  9. 9
    Strain into bottle (5 qts bottles) with lids or corks and seal.

    Let stand at room temp for 1-2 days until raisins float.
  11. 11
    Chill till ready to serve.
