Thai Stir Fry

Ingredients

• 1 (8 ounce) package basmati rice or jasmine rice
• 8 green onions, sliced
• 1/2 lb broccoli floret
• 1/2 lb carrot, thinly sliced
• 1/2-1 cup thai peanut sauce (store bought or homemade)
• 1/2 cup vegetable broth
• 2 teaspoons cornstarch
• 1/4 cup fresh cilantro, finely chopped (optional but highly recommended) (optional)
• 1/4 cup dry roasted peanuts, chopped (optional but hightly recommended)

Directions

   Prepare rice according to package directions.

   Pray a non-stick skillet with cooking spray.

   Heat the pan over medium heat.

   Add the onions, broccoli, and carrots until tender-crisp (4-5 minutes).

   Stire in peanut sauce.

   Combine vegetable broth and cornstarch and stir into the stir fry and bring to a boil.

   Boil stirring until thickened

   Serve over rice and garnish with peanuts and cilantro if desired.
