Ground Turkey Tortilla Casserole

This is a recipe that I adapted from a few other tortilla casseroles and it is a quick & easy tummy satisfier!

SERVES 4 , 4 pieces (change servings and units)

Ingredients

Directions

    Brown turkey and small onion until meat is completely done.
  2. 2
    Add taco seasoning packet and follow directions for cooking on back.
  3. 3
    Spray non-stick casserole dish (9x9) with non-stick cooking spray.
  4. 4
    Cut flour tortillas into bite size pieces and layer 1/2 of tortillas on bottom of casserole dish.
  5. 5
    Add 1/2 of the cheese, sour cream, salsa and black beans.
  6. 6
    Start with the remaining tortillas and repeat layering.
  7. 7
    You may top with extra cheese or salsa if preferred. Other options include: corn, red pepper, green pepper, jalapenos, or any other ingredient.

    ***play with ingredients, if you like more sour cream, simply add more, if you like less, add less. Don't be afraid to test different options.

    Bake at 350 until all cheese is melted and everything is heated thoroughly (usually about 30-40 minutes). You may wish to cover the dish with foil to prevent overbaking the top -- then removing it for the last 5-10 minutes.

MAde this with ground beef because I couldn't find the turkey in the freezer. This was AWESOME! The flavor was really wonderful and to be honest, I didn't expect this meal to be so good. I thought it would taste like an enchiliada casserole but it tastes completely different. Besides the meat, I made it exactly to the recipe...and I wouldn't change anything! I will make again and again.

    This recipe looks great, but I don't see cooking directions. I wanted to make this for dinner tonight. Maybe the chef will address this issue in time for me to do that? I don't have premium membership yet, so this is my only hope of finding out.

    This recipe really tasted great. I used ground turkey & had just enough sour cream for the layers, but none leftover for topping. It turned out that the dish was so moist t begin with that no one missed the extra sour cream. I served this to 12 hungry guys & everyone really enjoyed it. I would suggest a refinement of the instructions. They don't specify how to prepare the onion (I chopped finely) or what to do with the browned turkey & onion mixture once it's cooked. I stirred in the black beans to heat them through & then used the whole mixture as one layer. Thanks for sharing, 'lil cooker! Made, enjoyed & reviewed for Pick-A-Chef Spring 2008.
