Crock Pot Hen in Cherry Juice and Delicious Fruits

Slow, slow, slow cooked hen with cherry juice surrounded by apricots, cranberries, prunes, and apples... accented with allspice, topped with a sweet fruit reduction. Incredibly delicious and tender. Made my husband go nuts.

SERVES 4 -5 (change servings and units)

    Prepare hen to be cooked (make sure to wash and remove anything you don't want to eat, but leave the skin on).

    Stuff approximately half of the fruit required for the crock pot inside the hen, and place in crock pot breast up.

    Add cherry juice, allspice, and remaining fruit to the crock pot.
  4. 4
    Cook on low for 8-10 hours.
  5. 5
    For the sauce: Add all of the ingredients listed to small sauce pan and bring to boil.

    Let boil for 3-4 minutes and reduce heat to a medium simmer. Cover.

    Let simmer for about 20 minutes until fruit looks plump and juice looks more like a light sauce.

    Remove from heat and allow to slightly cool.

    Serve meat what ever way looks good to you. I shredded the hen and drizzled with reduction. Wonderful for main course as is or on top of a green salad. Great left overs! Throw into some wholegrain bread for a delicious lunch. Hope you enjoy!
