Tuna and Sweet Potato (Kumera) Patties

A quick n easy week night meal! Recipe source - Australian Good Taste Mag. Yummy cold too, a nice addition to a picnic basket or lunchbox.

SERVES 4 (change servings and units)

    Steam the kumera in the mircowave until tender.
  2. 2
    Drain and refresh under cold running water. Transfer to a large bowl.
  3. 3
    Use a potato masher or fork to mash the sweet potato until coarsely mashed. Add the tuna, egg, parsley and breadcrumbs, and stir until well combined. Season with salt and pepper.

    Divide the tuna mixture into 8 equal portions.

    Use wet hands to shape portions into 8cm patties.
  6. 6
    Heat oil in a large non-stick frying pan over medium-high heat.

    Add the patties and cook for 3-4 minutes each side or until golden brown. Remove from heat.

    Divide among serving plates and season with salt and pepper.

    Serve with lemon wedges, fries and a garden salad.

Yum, yum! I reviewed this as part of the Kid Friendly Recipe of the Week & it was delicious! The patties are easy to make - I put mine in the fridge for about 10 minutes before cooking. we ate ours with homemade chips / fries & a big crunchy salad! 6 year old DS & 16 mont old DD loved these just as much as DH & I - Thanks for a great kid friendly meal!

    I love tuna this is diffter but good I change put pickles in it. Great recipe.

    For the DM to eat a full pattie (I made 6 out of the recipe) and looking for another and demanding if there were any left over she was having them for lunch tomorrow, I now I am on a winner for her. The DS gobbled his two down and I was battling to eat 1 with salads (coleslaw and green) and herbal bread. Would suggest maybe adding everything but the eggs first and mix well and then add eggs one at a time as I found the 2 60g eggs may have been a bit too much and the mix was a bit too wet and made it very fragile to cook (broke up easily, had to be very careful in turning) and for personal taste I would like to sub finely sliced spring onions (scallions) for the parsley in future. Thank you Stardustannie for a keeper which will keep the DM happy. Made for Recipe swap #10 - November 2007.

    Loved these! Got interupted and only cooked patties 3 nights after making mixure and storing in refrigerator. Also, just because had on hand- substituted dried breadcrumbs with ground cornflakes - delicious served hot or cooled to room temperature
