This is really a great recipe! It is fast, simple and you usually have the ingredients on hand. I never use a mix! I got this from my sister years ago, and I have shared it many times.

Ingredients

  • 1 egg
  • 3/4 cup milk
  • tablespoons margarine, melted
  • cup flour
  • tablespoon sugar
  • teaspoons baking powder
  • 1/2 teaspoon salt
  • Directions

      Beat egg until fluffy.
    2. 2
      Add milk and melted margarine.
    3. 3
      Add dry ingredients and mix well.
    4. 4
      Heat a heavy griddle or fry pan which is greased with a little butter on a paper towel.
    5. 5
      The pan is hot enough when a drop of water breaks into several smaller balls which 'dance' around the pan.

      Pour a small amount of batter (approx 1/4 cup) into pan and tip to spread out or spread with spoon.
    7. 7
      When bubbles appear on surface and begin to break, turn over and cook the other side.

    Great classic pancake recipe! I grew up always using the mixes, so it was nice to finally make them from scratch. I added a few tablespoons of vanilla and probably a tablespoon of cinnamon. Topped off with applesauce. YUM! Thank you!

    This recipe really is awesome and easy Thanks Ellen. For NJG: I suppose everybody assumes you know how to make a pancake but your right some people don't. Basic instructions would be this: Start with a medium hot griddle or frying pan. Med hot means when you drop a few drops of water on griddle it should "dance" for a few seconds before evaporating. Take pan off from heat source and spray with Non-Stick Spray, put back on heat (a safety thing) pour or spoon about a half cup of batter on griddle (want smaller pancakes?...use less, want bigger pancakes? use more) If batter is thick just spread the top around to desired size and thickness with back of spoon. cook until top of pancake begins to look dry and flip. cook on second side until golden brown. That's it!! If this doesn't do it for you... have toast.

    Ellen you have yourself a fantastic recipe here in that it's quick, simple and very delicious. My daughter loves pancakes and she wanted me to throw a handful of raspberries and chocolate chips in the batter and they were wonderful. I like the idea of being able to walk over to the pantry and pull some basic ingredients and wala! we have pancakes. Thanks again Ellen for the great recipe. I'm submitting a photo in gratitude.
