Baked French Swirl Toast

This is a French toast casserole that I got from Campbellskitchen.com. We love it and it's so easy to make.

SERVES 6 -8 (change servings and units)

Ingredients

    Place bread cubed and cranberries or raisins in a greased 3-qt. baking dish.
  2. 2
    Mix the eggs, half and half and vanilla in a bowl.
  3. 3
    Pour over bread.
  4. 4
    Cover and refrigerate at least 1 hour. Overnight is fine.
  5. 5
    Uncover and bake at 350F for 45 minutes, or until set in the center. Sprinkle with cinnamon sugar and serve with butter and syrup.

I usually make overnight breakfast stratas that have a ton of ingredients & are a little time consuming, so I was thrilled at how fast this went together this morning - even before my coffee was brewed! It tasted delicious too. DS especially liked the crunchy crusts. The instructions don't say to cut them off (as I usually do), so I didn't. Even DH who doesn't like cinnamon was pleased with this recipe. Thanks for sharing, L. and T. mom! Made, enjoyed & reviewed for Pick-A-Chef Spring 2008.
