Pair with Karottesalat (Carrot Salad) and you'll have a very attractive, and authentic, salad plate!

SERVES 4 (change servings and units)

Ingredients

Directions

    Peel cucumbers (if waxed) and cut into very thin slices.
  2. 2
    Mix together vinegar, sugar, salt, and pepper and pour over cucumbers and onions (reserving 2 tablespoons).

    Marinate about 20 minutes.
  4. 4
    Mix dill or parsley with sour cream.
  5. 5
    Add sour cream to cucumber mixture and toss.
  6. 6
    Top with chopped onion, sprig of fresh dill or parsley and serve.
