The only way to eat fresh tomatoes! In anticipation of the impending tomato harvest, I share with you a family secret. This is the reason we look forward to the end of summer, to the time when our gardens and our friends gardens are bursting with little red-skinned treasures. When I tell anyone about this, besides my brother and sister — we learned it from Mom — and my children — now that I've gotten them to try it — they think I'm weird (well...yes, I am, but this isn't why). People looked at me oddly when I made this in the college cafeteria. At least I thought that was the reason. It never tasted right, though. I think the foodservice tomatoes were plastic. My husband seems to shudder if he sees me or the kids consuming this treat, but then, he hates warm peanut butter. Period. Won't touch it. I haven't managed to get any of my in-laws to give it a try; my husband's Dad just looks at me and shakes his head. Come to think of it, I get a lot of that from him. So, what is this food that most people seem to find so repulsive that they won't even consider it? I just call it exactly what it is: Peanut Butter and Tomatoes on Toast. If you're intrigued, the extremely difficult and intricate recipe follows below. If you think I'm weird, get in line. Grossed out? Get over it, and try it already. I thought it was pretty gross the first time I saw my Mom eating it, too, but she made me take a bite, and I was hooked.

SERVES 1 (change servings and units)

Ingredients

  • 1 slice toast, preferably rye,but whole wheat will work (white bread is NOT recommended)
  • peanut butter (creamy is preferable, but crunchy will do)
  • thick slices of real tomato, the homegrown kind (the pink plastic rocks in grocery stores will NOT work, they have absolutely no flavor of their own)
  • pepper (required)
  • salt (optional)

Directions

    Spread peanut butter on HOT toast.
  2. 2
    Concerned with calories-- You don't have to lay it on really thick, just make sure you can taste it.

    Now, completely cover the toast with tomato slices.
  4. 4
    Cut sliced tomatoes in halves or quarters, if necessary, to accomplish this task.

    Sprinkle liberally with black pepper, and add just a bit of salt, if desired.

    Eat while toast is still hot.

    If it gets cold, throw away and start over.

    Well, I'd probably eat it anyway, but it's not as good cold.

    Try it, you'll like it.

    Trust me on this-- the salty peanut butter is just wonderful with the tomatoes, and at least a little bit of pepper is necessary.

Yum. I used a halved, toasted whole wheat roll. I only used the roll because I had no sliceable bread, but it worked very well. One tomato slice per half fit perfectly! I added salt and pepper, and also green onion at the suggestion of Bergy. The green onion made it even better. I highly recommend it.

    My mom has been singing the praises of peanut butter and tomato sandwiches for as long as I can remember, but it took a bunch of strangers raving about it on here for me to finally try it. I made it just as you said, ThatBobbieGirl, using rye bread and toasting it. My gosh that's good stuff ! Tried it for the first time yesterday, and got a craving for it today and had to make another one. My mom's gonna be so happy when I tell her !

    Not at all weird. Peanut butter is savoury for Brits. We think Americans are strange for eating it as sweet and in more than three years, my American boyfriend has not been able to persuade me to try a peanut butter and jelly sendwich, which sounds absolutely disgusting to all Brits. I can't rate this; it's so obvious!

    ThatBobbiGirl -You may be way out and your mom may be way out but so am I!!!! I had a big lunch so decided to have your Peanut butter weirdo toast _ I heated the plate to keep the toast hot, slipped on the peanut butter, added the tomatoes and added chopped green onions - now I have adored peanuit butter with green onions for years but the tomatoes add the 3rd dimension - A true unique weird top winner!! Go everybudy - I know your writeup will pull in the views. Thanks for being fun, unique and good tasting
