My Dad's famous for this one. Feedin' a family with 5 kids, when budgeting, this was a favorite, and being Irish, well, lets just say it was a nice change from potatoes! We make this with the yolk still runny, but if you like your eggs well done, crack the yolk just before turning them. Or scramble them first, and add some crumbled bacon, cheese, peppers and onions.... Endless possibilities!

SERVES 1 (change servings and units)

Ingredients

  • 2 tablespoons butter, divided (or to taste. We love lots.)
  • 2 slices bread, with a hole made in the middle to fit an egg yolk
  • 2 large eggs
  • salt, to taste
  • black pepper, to taste

Directions

  1. 1
    In a large frying pan, melt half of butter over medium heat. Place the bread slices into pan, and crack an egg into the center hole.
  2. 2
    Sprinkle with salt and pepper. Cook about 2-3 minutes depending on how well done you want your yolks.
  3. 3
    Add remaining butter, and carefully flip over the bread with the egg center. Cook an additional 2-3 minutes.

What an awesome recipe! I was looking for something new & exciting to make my dad for father's day breakfast in bed, and this was perfect! I made 2 and served it with fried turkey bacon and a berry smoothie. The timing was perfect, the egg was cooked and the bread was well toasted. Thanks for the recipe!

    This was a fun little breakfast treat! So easy too! I was afraid that the bread would burn before the egg was cooked enough but it didn't - it was perfect. The toast was nice and golden, the yolk was soft and the white was firm, just the way I like my eggs. Thanks for sharing!

    My dad used to make this for us when we were growing up... we called it "One-eyed Toast" and had great fun "poking" the "eye" LOL! I use less butter and add a bit of olive oil to raise the cooking temp of the butter. I also cook on med-low. I think this helps with any sticking issues. Sometimes, I add a sprinkling of garlic powder and onion powder. Delish!

    Made this for breakfast this morning. My family enjoyed them but I had problems when I used the butter in the pan. My bread and eggs stuck to the pan. I switched to crisco and didn't have the problem. Enjoyed just the same. Good, quick, easy breakfast.
