Bulging Bison, Elk, or Venison Burritos

This is am easy way to make a healthy burrito wrap. Extra lean ground beef can be substituted.

SERVES 4 (change servings and units)

Ingredients

Directions

    Spray skillet with cooking spray.
  2. 2
    Add spices and salt to ground meat and cook until done.
  3. 3
    Combine beans and rice in a saucepan.
  4. 4
    Heat on low until warm through (or microwave).
  5. 5
    Place tortillas in a folded damp towel and place in the oven on low.
  6. 6
    Place a warm tortilla on plate, keeping other tortillas covered.
  7. 7
    Place 1/4 bean mixture and meat on flat tortilla, leaving 2 inches at bottom of tortilla so it can be folded up.

    Add 1/4 cheese, salsa, sour cream, lettuce or anything else that sounds good.

    Fold up the bottom and roll the sides around.

These were great! I ground up vension from DH's deer this year, so nice and fresh/frozen, lol. I didn't use up all the beans specified for each burrito. Just enough to add the flavor. I did sprinkle with salt just before rolling up. Very filling and great for a winter's lunch! We will be having the rest for dinner and I'm going to have to add some cheese, with cutting back on the beans which I'm sure must add the additional calories, cheese is allowed I think, lol.

    As the wind started picking up today, and we were famished, it was such a pleasant surprise to come in from the cold and make these quick, wonderful burritos. I used a mixture of ground lean pork, and ground lean beef to make these filling treats. I did reduce the meat to 1/4 lb. of meat, and replaced the "filling" to extra beans, and extra brown rice. When I warmed the beans and rice up in the microwave, I threw in a diced fresh tomato, chopped onion, cumin, and fresh cilantro. Added more cumin when browning the meat. Used whole wheat tortillas and so yummy. Will keep making this so many times, MarraMamba! This is wonderful!

    Excellent. I used extra lean ground beef and substituted the refried beans with black beans instead. My boys loved this dinner!

    Used ground buffalo meat and mixed the brown rice and refried black beans in with the meat for convienence. This is a nice mild burrito mix that can be spiced up using jalapeno jack cheese or spicy salsa. Great for all tastes.
