Southern Living; living in the South, catfish is always plentiful and fresh. My family really likes it prepared this way.

I was looking to do something different, but familiar for when my girlfriend visited me. Glad I came across this. Super easy; super good. Definitely saved this one to my cookbook. "Ooh Ohh!" lol

I've mad this twice now, and both times my family has eaten it all up. my VERY PICKY 8 year old ate 2 fillets by himself. Catfish is not normally my favorite fish, but it's great this way! To save on fat, I eliminate the melted butter and instead coat the tops liberally with olive oil cooking spray. It's very easy, and catfish remains a relatively inexpensive and safe (especially US farmed) fish to eat. This recipe is now a staple for us. Oh, adding a squeeze of lemon juice over the final dish puts it over the edge good!

Well, count me in the 5-star club on this one! Dh, a born and bred Southerner, was a bit suspicious of catfish that wasn't deep-fried, but when I assured him this was the only possible way I'd be making it he decided to give it a try. ;o) It was so easy and cooked up crisp and flaky...we were both surprised by how much we liked it (I have never before had catfish that I liked). For the first time in nearly 15 yrs of marriage, it looks like catfish will be a regular on our menu - thanks!

This is an excellent way to cook catfish. WOW, my family and I realllllly thought this was delicious and I was impressed by how easy it was to make. The fish were tender and flaky while the coating was crisp and well seasoned. Thanks for another great recipe. Keep 'em coming.
