Baked Ziti With Spinach and Cheese

This is great if you need to feed an army on the cheap! Serve with a salad and garlic bread, sure to be a pleaser!

SERVES 8 -10 (change servings and units)

Ingredients

    Cook spinach as package directs, drain, cool and squeeze out well.
  2. 2
    Add eggs, ricotta cheese, parm. cheese, and pepper. Mix well and set aside.
  3. 3
    Combine cooked ziti with sauce and oregano. Place 1/2 ziti miture in lightly greased 13X9 baking dish, layered with cheese and spinach mixture. Add remaining ziti.

    Cover with tin foil and bake at 375 degrees for 25 minute or until bubbly.

I made this the other night and it was great! I was looking for something easy that included spinach and ground turkey, this had everything I had on hand except the turkey so I added a pound of turkey and it was great! My husband gobbled it up and said I need to make it again soon!

    This is a really good basic recipe that can definitely be used to change to your tastes. I found the spinach mixture to be a little bland to suit my tastes. I did use Spaghetti Sauce without the meat in the sauce to make this dish. I have to agree with previous poster that it would indeed be even better with the addition of some type of meat my dh suggested hot Italian sausage, which I will try the next time I make this. This was made for Fall PAC 2008.

    Made for PAC Spring 08 I thought this was pretty good. I would probably add 1 lb meat (sausage or hamburger) next time and maybe half the recipe. I made as recipe stated, then topped with a little extra cheese. It tastes just like lasagna. The kids LOVED Thanks a bunch!
