Beef Enchiladas

The sauce on these is very rich and full of flavor. Everyone's favorite!

SERVES 4 (change servings and units)

Ingredients

SAUCE

Directions

    Brown ground beef, drain.
  2. 2
    Add next 6 ingredients, mix well.
  3. 3
    Put 1/3 cup filling down middle of each tortilla.
  4. 4
    Wrap, place seam side down in 13x9 baking pan.
  5. 5
    For Sauce: Heat oven to 350 degrees F.
  6. 6
    Saute onion and green pepper in hot oil until tender.
  7. 7
    Add next 4 ingredients, mix well.
  8. 8
    Pour over tortillas.
  9. 9
    Cover and bake 30 minutes.
  10. 10
    Sprinkle with cheese and bake 7 more minutes.

I added 1/2 pk. of taco seasoning to the ground beef, but other than that made per instructions, and it was one tasty dish! Had along with chicken enchiladas, and this was an excellent combination for dinner last night! The sauce was delicious and everyone raved about it. These will be made often as my family gave them 5+ stars!

    The enchilada sauce in this recipe is amazing. I added a cup of water to it before pouring it over the enchiladas. The black olives add a nice touch, and the cottage cheese melts down to add some creamy goodness. I will be trying this with cheese alone instead of the beef next time.

    I wasn't sure how this would go over with my family, because we're really not cottage cheese fans, but they didn't even realize it was in the recipe! I was also surprised they didn't complain about the black olives, which I love, but they're at best luke warm about. They've asked me to make it again, though, so it's a keeper!

    These were really good. I followed the directions with the exception of adding some cheese to the meat mixture as suggested by one of the other reviews. It wasn't too hot, but just right. Served it with some sour cream and our homemade salsa. Side dish was Green Chili Rice to make for a wonderful dinner. Thanks
