Rich, Fudgy Vegan Brownies

Soooooo good - tastes just like a brownie should. Even the most experienced dessert eaters wouldn't guess they are vegan. Recipe from Vancouver magazine.

SERVES 12 (change servings and units)

Ingredients

Glaze for extra decadance

Directions

    Sift together the flour, sugar, baking powder and soda, and salt.

    In a separate bowl, combine the coffee, soy milk, and oil.
  3. 3
    Add the liquid to the dry ingredients and mix; then stir in the nuts and chocolate chips.

    Pour batter (it will be quite liquidy) into a greased 9x9" pan and bake at 325º for 25 minutes, or until a toothpick inserted in the middle comes out clean.

    (Note- for a smaller pan, the baking time could be substantially longer- a 7x10 pan took about 40 minutes).

    For glaze- melt the chocolate and margarine and whisk, then drizzle over brownies.

    (Note- this is a lot of glaze- an ounce of chocolate and a tablespoon of margarine makes a nice amount).

These brownies came out just right. They were nice and moist. I used espresso instead of coffee though. It gave it a little kick.

    Delicious and rich, without being too bad for you. Mine took about 40 minutes to bake, but it was well worth the wait. The coffee really enhances the chocolate flavour. I cut the amount of sugar in half and they were still quite sweet.

    Took longer than anticipated even in the correct size pan. Very moist and delicious. I took out those nasty walnuts and substituted unsweetened applesauce for the oil. I used chocolate soy milk for both the coffee (not a coffee drinker) and the regular soy milk. It tastes great!

    These are super delicious!!!! I highly recommend them and will definitely make them again. I left out the walnuts and didn't do the glaze but they still received rave reviews. I agree with some of the other posts in that it turns out more like cake than brownies, but there aren't any complaints here!
