Extra Creamy Macaroni and Cheese

You probably won't search any further for mac and cheese recipes after trying this one, this is very similar to Stouffer's macaroni and cheese ---I sometimes add in 1/2 cup sour cream, but that is only optional, if you are not a garlic-lover then omit completely but I always add it in ---tortiglioni pasta is like a longer wavy thicker macaroni that is sold in most every grocery stores I prefer to use that for my macaroni and cheese dishes but if you are unable find it just use regular elbow macaroni pasta — you could omit the oven-baking and just serve this right away --- you will love this, it is very good!

Ingredients

  • 1/2 (500 g) package uncooked tortiglioni pasta (or use 1-3/4 cups elbow macaroni)
  • 1/3 cup butter
  • small onion, finely chopped
  • tablespoon fresh minced garlic (optional)
  • 1 1/2 teaspoons onion powder
  • teaspoon mustard powder
  • 1/4 teaspoon cayenne pepper (optional)
  • tablespoons flour
  • cups half-and-half cream (or use milk or 1-1/2 cups each)
  • 1 1/2 cups old shredded cheddar cheese
  • 1 (450 g) package Velveeta cheese (cut into small cubes)
  • seasoning salt
  • fresh ground pepper (to taste)
  • 1/2 cup grated parmesan cheese (optional)
  • Directions

      Set oven to 350 degrees F.

      Butter a small casserole dish.
    3. 3
      Cook the pasta in a pot of boiling salted water until al dente (do not overcook the pasta) drain but do not rice.
    4. 4
      Place in a bowl and mix with 2 tablespoons butter to prevent sticking; set aside.

      Melt butter in a large saucepan over medium heat.
    6. 6
      Add in onion, garlic, onion powder, mustard powder and cayenne pepper; stir with a wooden spoon for about 3-4 minutes.

      Add in flour and stir for 1 minute.

      Slowly add cream and cook stirring constantly over medium until bubbly and thickened.

      Reduce heat and add in both cheeses; mix until melted and smooth.

      Season with season salt or white salt and black pepper to taste.

      Add in the cooked pasta and toss to combine.

      Transfer to baking dish.

      Sprinkle with Parmesan cheese.

      Bake 350 degrees F for about 20-25 minutes.

    This was an excellent mac and cheese recipe. I left out the onions and garlic, and it was still wonderful. VERY filling! I had a medium-sized scoop of it, and it stuffed me so much I can hardly breathe right now. But it was gooooood.

    This was a very good Mac & Cheese recipe, and although I did think that even with the seasonings it needed something, so I will tinker with it to suit my tastes, but I WILL be making it again. Thank you Kitten, and I hope you are feeling better soon. Oz

    Finally got some Velveeta and gave this a try. It's really nice and creamy. I found it a bit too saucy, actually have half the sauce saved for another batch! I loved the addition of garlic! Great recipe - thanks!
