No Egg/Cream Carbonara

I saw this on the Food Network show Quick Fix Meals the other day. I liked the fact that there were no cream or eggs involved in this recipe.

SERVES 4 (change servings and units)

Ingredients

Directions

    Cook spaghetti according to package directions.
  2. 2
    Meanwhile, cook bacon in a large skillet over medium-high heat until golden brown. Add onion and garlic and saute 3 minutes, until onion is soft.

    Add oregano and cook 1 minute. Add flour and stir to coat onion.
  4. 4
    Add milk and bring to a simmer. Cook 5 minutes, until sauce thickens, stirring frequently.

    Remove from heat and stir in sour cream, Parmesan and parsley.
  6. 6
    Season, to taste, with salt and black pepper.
  7. 7
    Drain pasta and toss with sauce to coat. Serve.

    We thought this had a good taste, but it really didn't turn out well for some reason. It was VERY dry at the end and the sauce was way too thick. I double checked the ingredients and directions and didn't see anything we did wrong so I don't know what happened. I think even if the sauce weren't as thick it would need more of it to really cover that amount of noodles. We actually only had a 14.5 oz. box of noodles even. I did cook our bacon seperately to keep it crispy and added it at the end. We served this with some parsley bread which was a nice match. I may or may not try this again sometime to see if it was just an error somewhere.

    I loved this recipe! I didn't have any sour cream so i used powdered milk with some lemon juice and water blended together. I still turned out well even without having that! Easy to make a delicious. Thank you!
