Directions

    Crush the mint, pineapple chunks and brown sugar in the bottom of a shaker.

    Add the rum and shake with ice.
  3. 3
    Strain in a highball glass filled with crusched ice.
  4. 4
    Complete with pineapple juice and stir.
  5. 5
    Garnish with a pineapple chunk and mint.

I actually had some fresh mint hiding in the garden. My pineapple was really ripe and it was easy to muddle everything together. Next time I will add more than a dash of pineapple juice; I like my drinks not quite as strong.

    Very good and refreshing. My only 'problem' with the drink was the fact that pineapple just does not crush very well - it was too fibrousy and chunky to enjoy simply crushed. I think pureeing it may be a better way to go.

    I really enjoyed this refreshing drink. I love pineapple so I knew I would like this. A great drink to serve anytime! Thanks for sharing.
