Sweet Potato Pecan Pie

For Pecan Topping

• 1 egg
• 2 tablespoons firmly packed light brown sugar
• 2 tablespoons dark corn syrup
• 1 tablespoon melted butter
• 1/2 teaspoon maple flavoring
• 1 cup chopped pecan

For Pie

• 1 lb sweet potato, cooked and peeled and STILL HOT
• 1/4 cup butter, softened
• 1 (14 ounce) can sweetened condensed milk
• 1 egg
• 1 teaspoon grated orange peel
• 1 teaspoon ground cinnamon
• 1 teaspoon vanilla extract
• 1/2 teaspoon ground nutmeg
• 1/4 teaspoon salt
• 6 ounces graham cracker pie crust

   For PIE:.

   Preheat oven to 425 degrees F.

   In large mixing bowl, beat HOT potatoes and butter until smooth.

   Add remaining ingredients except crust and Pecan topping; mix well.

   Pour into crust.

   Bake 20 minutes; meanwhile, prepare topping.

   For PECAN TOPPING:.

   In small mixing bowl, beat all ingredients except pecans; after mixed, stir in pecans.

   Remove pie from oven.

    REDUCE OVEN TEMPERATURE TO 350 DEGREES F.

    Spoon Pecan Topping over pie.

    Bake 25 minutes longer or until set.

    Cool.
