Spinach Lasagne Rolls

This is such an easy way to make lasagne. The noodles are individually rolled instead of layered. It's pretty enough to serve to guests! I really love this and hope that you do too.

SERVES 4 -6 (change servings and units)

Ingredients

    Preheat oven to 350 degrees.
  2. 2
    Cook noodles according to the package directions.
  3. 3
    Drain, rinse under cold water and drain again. Set aside.
  4. 4
    Squeeze out as much moisture from the spinach as possible.
  5. 5
    Stir together spinach, 3/4 cup of the parmesan cheese, ricotta cheese, nutmeg, salt and pepper.

    Spread about 1/4 cup of the spinach mixture along entire length of each noodle; roll up noodles.

    Stand rolled noodles on end and slightly apart in a greased 9 x 13 baking dish.

    Pour spaghetti sauce over noodles.

    Bake, covered at 350 degrees for 30-45 minutes.

    Sprinkle with remaining 1/4 cup parmesan cheese and mozzarella cheese.

    Serve as is, or put in oven until cheese melts.

Review my Recipe 2008 ~ I usually make plain lasagna rolls and never really added spinach to them so this was a nice addition. I used freshly ground nutmeg and my homemade pasta meat sauce. (DH has to have meat of some kind at dinner...he said he didn't work his way up the food chain to be a vegetarian!...no offense to all you veggies out there!) I also laid the rolls down in lieu of standing them up...just my preference. Thanks LisG.

    I think the nutmeg just wasn't our thing... Next time I make these, I'll leave it out and put in hot pepper flakes or garlic instead, as I thought the filling was a bit bland. Although, the recipe directions were quite easy to follow, which I appreciated since I have never made lasagne rolls before.
