Caesar Salad Dressing

This makes the most delicious dressing.

SERVES 4 (change servings and units)

Ingredients

For the dressing

Directions

    Mash garlic and salt together for dressing. Place in bowl.
  2. 2
    Add Parmesan, lemon juice, mayonnaise, anchovy paste, Dijon, Worcestershire sauce and Tabasco. Stir until blended.
  3. 3
    Whisk in oil in a slow, steady stream to form an emulsion. Season with salt and pepper, chill.
  4. 4
    Toss with romaine lettuce and top with extra Parmesan cheese.

I am very surprised to find that this Caesar Salad Dressing is not at the top of the list! I have been searching for this dressing a long time and have tried many of the highly rated zaar ones. Most of them were too egg-y, not creamy enough, too oily etc. This one, however, is perfect. I have already made it a bunch of times and all agree it is divine. I drool just thinking about it. Do not leave out the anchovy paste. I hate anchovies and can attest that the small amount does not make it taste fishy but gives it that little kick that makes it taste like a gourmet dressing. I blend it with my hand mixer and put it in the fridge about 1 hour ahead of time. This will be my staple Caesar dressing from now on!

    I really enjoy caesar salads and this dressing is very easy to put together. It was made as directed. Made for *PAC September 2007*.
