Donna Hay's "after dark" martini's are just delicious sounding, and i received this months issue in a swap, had to post them.

SERVES 1 (change servings and units)

    Place all ingredients into a cocktail shaker. Strain into a martini glass and serve with the vanilla bean folded into it. (so both ends peek out).

    I loved sipping on this coconut Martini. It is just what I needed after a tough day at work. It is so smooth. I used non-fat coconut milk and it worked perfectly. Thanks MarraMamba!
