Bright Summer Salad/Salsa

No added oil here. Just good fat from the avocado. This is a France meets Tex-Mex recipe.

Ingredients

  • cups grape tomato or cherry tomato, halved leaving some whole for texture
  • 2 ripe avocado, seeded, peeled, and diced
  • small red onion, sliced thin
  • tablespoon caper
  • tablespoon minced jalapeno pepper, seeded
  • 1 lemon, juice of
  • 1 lime, juice of
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon kosher salt
  • ground black pepper
  • 2 garlic clove, minced
  • bunch fresh cilantro, chopped 1/3 cup (or parsley)
  • Directions

      Place tomatoes, avocados, and red onions in a bowl.

      Carefully mix remaining ingredients together and pour over the tomato mixture.

      Chill for 30 minutes to let flavors meld.

    I love this refreshing salad! The Avocados and tomatoes are so refreshing and the jalapeƱo adds a lil kick! Yum!

    Used regular tomatoes (seeded) and a splash of hot sauce instead of minced jalapenos, but otherwise followed the recipe - which is fabulous!! The gloriously tart dressing complements the avocados and tomatoes so well. As a side salad this is just perfect! I'd love to eat this as a lunch salad too as I love the combination of the ingredients, and for that, I'd tone down the tartness of the dressing a bit. Thank you Rita!
