Salmon poached in liquid Heaven!

SERVES 4 (change servings and units)

Ingredients

Directions

    Season fillet with salt and pepper.
  2. 2
    Heat oil in a large pan; saute onions, garlic and carrots for 3 minutes over medium high heat; sprinkle brown sugar over onion mixture to caramelize saute for 2 more minutes.

    De-glaze with chicken broth, lemon juice and rind and white wine Place salmon on top cover and simmer for 7 minutes. Top with capers and serve.

Yummy is right! I'm not big on salmon but my hubby is. Out of curiosity I tried it, and it's good. It was easy to prepare also. Will make again, especially for company!

    This is an excellent way to make salmon. Very flavorful and easy. My salmon took only 5 minutes to cook. I had some thinner wild fillets to use. Will make this again for sure. Thanks for sharing the recipe!
