Apple-Pecan Pancakes

Apples, raisins, pecans, and just a hint of lemon – what could taste better with a steaming cup of fresh coffee? These light, fruity pancakes taste so good no one will realize how healthy they are. Freeze the extras to reheat in the microwave and you’ll have a hot, delicious breakfast a lot faster than waiting in line at the drive-thru. Or hand them to the kids cold for an on-the-go, in-the-car start when time is short.

SERVES 9 , 3 doz pancakes (change servings and units)

  • 2 cups finely-chopped apples (I recommend Rome , Empire, Cortland , or the best, local, cooking apple that is currently in season)
  • 1/2 cup golden raisin, chopped
  • 1/4 cup pecans, finely chopped
  • 1/2 teaspoon lemon zest (optional)
  • additional milk (optional)

Directions

    Mix dry ingredients together thoroughly.

    Add lemon juice to cream and let sit for 2 minutes.
  3. 3
    While cream sits, beat eggs into the milk. Combine with cream and vanilla.
  4. 4
    Toss apples, raisins, pecans, and lemon zest with the dry mix.

    Preheat lightly-greased griddle medium to medium-high.
  6. 6
    Pour liquid mix into dry mix and stir together well to make a thick but fluid batter. Do not overmix or pancakes will not be as light.

    Ladle batter onto griddle to make pancakes about 4 inches in diameter. Turn when bubbles appear all over the pancake.

    Cook until done in the middle – adjusting heat if necessary to avoid burning.

    Continue, greasing griddle as necessary, until all pancakes are cooked.

    Batter may thicken as it stands. It may be necessary to thin it with a little additional milk if it gets so thick that the pancakes don’t cook properly in the center.

    Leftovers can be reheated in the microwave or toaster oven. Do not use regular toaster because of the fruit.

    Leftovers can be eaten cold for breakfast or snacks.

    Leftovers can be frozen flat on a baking sheet lined with waxed paper then loaded into freezer bags to use as needed.

I made these not too long ago and my family loved them. My hubby was a bit iffy when I told him the name of the pancakes, but he fell in love after the first bite. My 3 year old likes hers with peanut butter smeared on top. And they made the whole house smell good while cooking.

    I've been meaning to make these for ages and I finally got around to it!!!!!These are lovely pancakes...very automnal! I'm afraid I didn't follow the recipe to the T...I just threw everything together! ...so maybe they weren't as light as they are meant to be but they still tasted brilliant!

    We had breakfast for dinner and loved these pancakes! I actually only made 1/3 of the recipe, which was pretty easy to do (except I forgot to 1/3 the pecans, which didn't matter at all... we liked the extra nuts!) These were moist and tasty. I used a granny smith apple, part white whole wheat flour, and old fashioned oats. Next time I may try with low fat milk rather than the heavy cream and see how it turns out... But it was definitely good with the cream! THanks so much!

    Wow, wow, wow. These were wonderful. The flavor was amazing, sweet, tart, nutty. I served mine with pure maple syrup it hi-lited all the flavors in the pancakes. These delicious pancakes were very filling, so I froze the rest, (they freeze very well). The large tasty pancakes were light and fluffy. I really enjoyed the apple/raisin/pecan combination, they blended beautifully. Great use of contest ingredients. You have my vote, good luck in the contest.
