Grilled Basil Lemon Chicken

A simple dish that I use for basil lemon chicken panini the day after. You can use tenders or chicken scaloppine as well. Thanks for catching my omission of the basil in the directions, I have fixed it.

SERVES 4 (change servings and units)

    Zest the lemon and squeeze the juice, combine zest and juice with oil, basil and garlic in a small bowl.

    Put chicken breasts between wax paper and pound to an even thickness.
  3. 3
    Place in glad bag or bowl with marinade and leave for 30 minutes to 20 hours.
  4. 4
    Grill chicken on bbq, broil it, or even cook it in a hot skillet, 6-8 minutes approximately.

ABSOLUTELY TOP RATE CHICKEN ~ so easy to prepare & so tasty! Loved the combo of lemon & basil, & I did use lemon pepper instead of the usual S&P! Wonderful change of past for us! Thanks for another KEEPER! [Tagged, made & reviewed in Zaar Stars recipe tag]

    Delicious chicken — however I have to admit I skipped the pounding of the chicken — rather I marinated my (still frozen) chicken breasts (I used 5) in the marinade for about 5 hours - grilled them for about 30 minutes or so — delicious and so easy! Thanks for sharing this keeper recipe which we will be having often!

    Outstanding! Mixing sweet basil with slightly licorice-tasting Thai basil from my garden and using limes rather than lemons (what I had on hand) I marinated the chicken for 4 hours. After quick-cooking the chicken in my stove top grill pan, I deglazed the skillet with white wine and a squirt of lime juice which gave me a lovely pan sauce. I did have some bits of basil that overcooked as I expected but that did not detract from the flavor. Garnished with a basil chiffonade, this chicken made a stunning presentation. We ate 2 pieces for dinner and I have the other 2 to make your Basil Lemon Chicken Panini later in the week. Thanks for sharing your super recipe!

    I loved the flavor of this! I only marinated it for about an hour and they were still so flavorful! I used one on Colors of Life Salad. Very simple too. Thanks!
