Wheat & Walnut Granola

Eat this crunchy cereal for breakfast and get your essential fats and protein, both which help keep your hunger at bay during a busy day! Feel free to add additional dried fruits. From the California Walnut folks.

Ingredients

  • nonstick cooking spray
  • cups bite size shredded whole wheat cereal
  • cups chopped walnut
  • 1/2 teaspoon salt (optional)
  • 1/2 cup honey
  • 3/4 cup raisins
  • 3/4 cup dried cranberries
  • teaspoon vanilla
  • teaspoon cinnamon
  • Directions

      Preheat oven to 325°F
    2. 2
      Spray a large, shallow baking pan with no-stick cooking spray.
    3. 3
      In a large bowl toss together shredded wheat and walnuts; set aside.
    4. 4
      In a small bowl stir together honey, vanilla, cinnamon, and salt, if using.

      Pour over the dry ingredients and toss thoroughly to combine.

      Spread evenly in the prepared baking pan and bake for 25-30 minutes, stirring two or three times, until the mixture is lightly toasted. If it seems damp, it will crisp as it cools.

      Cool completely, then add the dried fruit.

      Store in an airtight container.

    Yum. This was very easy to make and the baking time was spot on. I found that if I zapped the honey mixture in the microwave until very runny it made distribution easier. I will keep this as a treat for weekends, or when I have overnight guests, as the fat content is a bit high for everyday. (Even if it is good fat.) Also, I left out the salt and don't miss it at all. Thanks for the recipe. I'm sure to make it again.

    I don't know what happened but this one didn't seem to work too well for me. I found that the coating didn't stick to well to the mini wheats and ended up sticking to the pan when cooking. I loved the idea of this & the coating tasted great but it just didn't stick to my wheat bikkies as well as I would have liked!

    So easy to prepare, very tasty and crunchy!! Instead of raisins, used dried apricots. Made a mix of half honey and half maple syrup. Made this for Photo Tag. Thanks Sharon!
