Jayne’s Peanut Butter Noodles

Jayne likes his noodles easy and fast. This is about as fancy as he gets when making them. Just a bit sweet and spicy… if he’s being uncharacteristically generous and sharing them with someone else, he might leave out the cayenne. (Inspired by Joss Whedon’s television show “Firefly” and movie “Serenity.”)

SERVES 2 , 1 Jayne-sized serving (change servings and units)

    In a large pot of boiling water, cook noodles according to packages directions.
  2. 2
    When noodles are almost done cooking, in a saucepan combine the broth, ginger, soy sauce, peanut butter, fresh yellow or white onion, honey, cayenne, and garlic, and cook over medium heat until the peanut butter melts, stirring occasionally. Reduce heat to low.

    When noodles are done and drained well, add them to the saucepan and toss to coat.
  4. 4
    Put on plates or in bowls and garnish with green onions and peanuts.
  5. 5
    Makes 1 Jayne-sized serving, or 2 regular size servings.

    Note: you can use more broth to get the sauce to the consistency you prefer. You can also use fresh ginger and minced fresh garlic if you have them available. Red pepper flakes are also a good addition!

I admit the Firefly reference reeled me in, but this is quite a tasty dish. I stir-fried some pork (not strictly authentic but I need some protein) in sesame oil and added a splash of rice vinegar (maybe two tablespoons). Quite nice.

    Quick and easy recipe. I would double the sauce next time. I used fresh ginger & garlic and sesame oil to make the sauce a little less thick. Thanks!! Yummy.

    This was an instant classic. Incredibly fast to put together and DH and I scarfed it down. So tasty! Added a splash of sesame oil and used regular peanut butter and omitted the honey. Will be repeating alot!

    Great dish! I used egg noodles instead of the udon noodles and it came out very good. It paired perfectly with Grilled Tuna Steak (Grilled tuna steak).
