A nice simple rice side, simply make as directed or else throw everything in the rice cooker adding the parsley at the keep warm stage.

SERVES 4 -6 (change servings and units)

Ingredients

Directions

  1. 1
    Heat oil & saute onion & garlic until tender, stir in rice.
  2. 2
    Add boiling water until pan is 3/4 full. Bring to boil, stirring.
  3. 3
    Stir in stock & rapid boil for 10-12 mins or until tender, drain well.
  4. 4
    Return to pan adding lemon rind, parsley & pepper, toss well to combine.

YUMMY rice recipe. Made this to go with a grilled steak that had lime and cumin and it was perfect. My only question was how much boiling water or what size pot or pan? I cook a lot of rice so i figured it out and it turned out perfectly. Made for Greece in ZWT4. Thanks!!

    Wonderful side dish! I love rice and now have another recipe to add to my keepers! This cooked up wonderfully with no problems at all. Great directions. I would like more brothy flavor so I may stir in some extra soup base next time. Thanks Amanda! Made for ZWT4

    Wonderful combination of flavors. Hated the technique, but my pan and my stove are going to be different than yours. On my stove in my pan, this technique almost made me burn the bottom of the rice and have the top still uncooked. BUT! I saved it, and the flavor is so amazing, that I am definitely putting this in my keeper file and simply making it the way I would a pilaf normally and it will be a 5 star recipe then! This went excellently with the pork tenderloin I served with it, so don't think it only pairs well with fish. Thank you for posting, made for ZWT4.

    The rice lovers that we are - everyone voted this a five! Read Flying Chefs review and went with the wild rice and agree - it was gorgeous! Going to do the saute and give the rice cooker a go next time around - yes I love my rice cooker! Going to pair it with fish that is in the planning for one of our suppers. Than you Mandy.
