Grilled Caribbean Jerk Chicken W/ Pineapple Reduction

This dish goes great with a salad in the summer. It sounds complicated and the flavors are complicated, but it is SO EASY!

SERVES 4 (change servings and units)

Ingredients

    Heat grill and spray with nonstick spray.

    Rub jerk seasoning into chicken.
  3. 3
    Grill chicken 8-12 minutes, or until cooked through.
  4. 4
    In a saucepan, pour juice from canned pineapple, rum and vinegar.
  5. 5
    Chop one slice of pineapple into very small pieces and add to the saucepan.
  6. 6
    Zest the lime into the pan.
  7. 7
    Simmer over medium - low heat until the liquid reduces by half.
  8. 8
    Add cilantro, butter, cayenne and salt and pepper to taste.

    simmer for a few minutes on low.

    place sliced pineapple on hot grill and cook 2-3 minutes per side--just enough to leave grill marks.

    serve chicken with pineapple on top and sauce poured over.

    Squeeze the juice of the lime over the dish.

    I like to serve it with a fresh summer salad--the sauce makes a nice dressing when cooled.

Wow, this was really good and very easy to make. The sweet and spicy combination was incredible. I will have to cut back on the jerk seasoning on the kids chicken since this came out a little spicy, but it was perfect for my DH and myself.

    This recipe is fantastic! The jerk seasoning pairs really well with the pineapple and coconut rum reduction. This was sweet and spicy which is a pairing I love. I paired this with a fresh salad that I made with red peppers, celery, carrots, english cucumber, fresh romain lettuce, crumbled turkey bacon and a nice light vinaigrette dressing. This is definitely a keeper!
